Situated between Japan and Taiwan, the Kuroshio Current, also known as “Mashio," is a warm ocean current that significantly influences marine life in the region. This current is particularly vital for fish migration, especially for bonito, a fish highly valued in both Taiwanese and Japanese cuisines. Bonito is not just a staple in daily home cooking; it is also a favored ingredient among chefs specializing in Japanese cuisine.
In recent years, Western chefs have begun to recognize the exceptional flavor of dashi, a traditional Japanese stock made from key ingredients such as dried bonito, seaweed, and mushrooms. Dashi is foundational to Japanese cooking and permeates much of its culinary culture. It is created by extracting rich flavors from these ingredients, making it a vital component of many dishes.


Dashi is regarded as essential in daily life for many Japanese people. It adds a distinctive level of umami to a wide range of dishes, including miso soup, ramen, udon, chawanmushi, and tare dipping sauces. Its influence has even extended into Western cuisine, making appearances in some of the world’s top restaurants. Our Imagine Gin is crafted using approximately seven to eight ingredients, prominently featuring the signature umami flavor from smoked bonito. Additionally, we incorporate local plants and herbs, such as Japanese sanshō and yuzu, to create a complex and delightful flavor profile.

Taiwan, situated in the subtropical region, is renowned for its abundant tropical fruits. Notable among these are pineapple, mango, and passion fruit, which thrive in the island’s warm climate. The pineapple, known as “鳳梨" (fènglí) in Mandarin, derives its name from the resemblance of its fronds to a phoenix tail. In many Asian cultures, the phoenix symbolizes auspiciousness and celebration, making this fruit a fitting representation of Taiwan’s vibrant spirit.


In addition to its fruits, Taiwan is home to a variety of unique herbs that are integral to indigenous food and cuisine. Our tropical gin is crafted using ten carefully selected ingredients, with pineapple and mango serving as the signature fruits.
These fruits not only highlight Taiwan’s agricultural richness but also impart a delightful sweetness to our gin.
